Founded in the eleventh century as a fortification on the Florence-Siena border, the walled village of Volpaia sits on a hilltop just north of Radda in the heart of the Chianti Classico region. For over 900 years, Volpaia has been an important center of viticultural activity, and today the cellars and winery equipment of the family-owned producer Castello di Volpaia can be found within the village’s iconic Renaissance-era church. A stunning juxtaposition of Italian tradition and modernity, Castello di Volpaia utilizes organic viticulture and state-of-the-art technology to craft world-class wines from ancient clones of Sangiovese.
In the glass, Castello di Volpaia’s 2016 Chianti Classico (made with 90% Sangiovese and 10% Merlot) displays a vivid ruby color and intense aromas of red fruits and spices. On the palate, flavors of preserved cherries are joined by undertones of dusty earth and tobacco that lead to mouthwatering acidity in the finish. This elegant red is an ideal companion at the table, with ample acidity to cut through the fat in cheese, butter, or cream, and sharp berry flavors to contrast the natural sweetness in those ingredients. Think of this red as your new go-to with Italian favorites like pizza, risotto, and pasta with extra grated cheese.
