Muscadet is the traditional wine of the rain-soaked Pays Nantais region of western France where the Loire River meets the Atlantic Ocean. There, a white grape called Melon de Bourgogne is used to produce wines that are bone dry, high in mouthwatering acidity, and classically paired with the region’s abundant seafood. To add a touch of richness to this typically lean and light-bodied wine, Louis Metaireau’s “Carte Noir” (“Black Label”) Muscadet is aged sur lie, a process whereby finished wine is aged on the spent yeast cells that are leftover after fermentation. The wine “marinades” on the lees, gaining texture as well as telltale nutty, autolytic flavors. Louis Metaireau’s Muscadet 2013 stands out in its category, offering a real depth of flavor that combines tangy citrus and briny acidity with hints of marcona almonds and beeswax.
