With a history that dates back to the eleventh century and a staggering 288 hectares of prime vineyard holdings, Taittinger is one of the great family-owned estates of Champagne. The Comtes de Champagne Blanc de Blancs is the ultimate expression of the Taittinger house style, produced only in exceptional vintage years and made from 100% Chardonnay sourced from five Grand Cru villages in the Côte des Blancs. Once bottled, the Comtes de Champagne is aged in underground chalk caves for 10 years before finally emerging to ignite the palates of wine lovers with its mature, complex flavors.
The great 2007 vintage of Comtes de Champagne lives up to all expectations as soon as the bottle is opened. The typical Chardonnay color is there in all of its golden glory, with shimmers of green coating the constant stream of fine, delicate bubbles. The nose is refined and elegant with notes of fresh brioche, lime blossom, and caramelized grapefruit. On the palate, the attack is vibrant, powerful, and precise, with a combination of lemon and saline that leads to hints of sweet licorice in the lingering finish. Perfect for a truly special celebration, this Champagne is delicious on its own but also pairs beautifully with shellfish, caviar, and anything fried.
