Checking in at 60% Merlot and 25% Cabernet Sauvignon with dollops of Cabernet Franc and Petit Verdot rounding out the blend, Saint-Corbian’s 2012 release reveals a deep garnet color and a complex bouquet of ripe black fruits, graphite, and mesquite. On the palate, the wine is rich and full-bodied with velvety tannins and a plush texture imparted by the unusually high percentage of Merlot in the blend. This wine pairs beautifully with richer fare such as grilled red meat, pork dishes, and duck, but will also reward the patient wine drinker as it continues to evolve over the next 5-10 years.
